





Hug in a Mug
Ingredients
- 4 sweet potatoes, peeled and diced
- 2 Tbsp. coconut oil (solid at room temperature)
- 1 onion, peeled and chopped
- 4 cloves of garlic, peeled and crushed
- Thumb sized piece of ginger, peeled and grated
- 2 Tbsp. tomato puree
- Half a jar of ready roasted peppers, drained and chopped
- I bay leaf
- 300g red lentils
- 1.5 litres of vegetable bouillon/stock
Instructions
- Heat the coconut oil in a large pan
- Add the onion and fry for a few minutes until softened
- Add the ginger and garlic and cook for another minute
- Add the tomato puree and stir for another minute
- Add the chopped peppers and sweet potatoes, stir to coat with the oil for a minute
- Add the bay leaf, lentils and bouillon
- Bring to the boil then reduce the heat to a simmer for 25-30 minutes or until the sweet potatoes and lentils are tender
- Season to taste and serve garnished with fresh coriander
Notes
This smells amazing and tastes so comforting. You could also puree this and serve as a dhal.
