Hug in a Mug

Ingredients

  • 4 sweet potatoes, peeled and diced
  • 2 Tbsp. coconut oil (solid at room temperature)
  • 1 onion, peeled and chopped
  • 4 cloves of garlic, peeled and crushed
  • Thumb sized piece of ginger, peeled and grated
  • 2 Tbsp. tomato puree
  • Half a jar of ready roasted peppers, drained and chopped
  • I bay leaf
  • 300g red lentils
  • 1.5 litres of vegetable bouillon/stock

Instructions

  1. Heat the coconut oil in a large pan
  2. Add the onion and fry for a few minutes until softened
  3. Add the ginger and garlic and cook for another minute
  4. Add the tomato puree and stir for another minute
  5. Add the chopped peppers and sweet potatoes, stir to coat with the oil for a minute
  6. Add the bay leaf, lentils and bouillon
  7. Bring to the boil then reduce the heat to a simmer for 25-30 minutes or until the sweet potatoes and lentils are tender
  8. Season to taste and serve garnished with fresh coriander

Notes

This smells amazing and tastes so comforting. You could also puree this and serve as a dhal.

Gluten-free Chilli Corn Muffins

Gluten-free Chilli Corn Muffins

Ingredients

  • Dry
  • 140g fine corn meal
  • 1/2 tsp. baking powder (check this is gluten-free, not all are)
  • 1/2 tsp. bicarbonate of soda
  • 1 Tsp. dried chilli flakes (vary according to taste)
  • 1 Tsp. dried marjoram
  • 1 Tsp. cumin seeds
  • 1/2 Tsp. salt
  • 70g grated cheddar cheese
  • Wet
  • 2 Tbsp. melted unsalted butter
  • I large egg, beaten
  • 225ml natural yoghurt
  • Cheese mix
  • 1/2 ball of mozzarella cheese, diced
  • 1 Tbsp. fresh coriander, chopped

Instructions

  1. Preheat the oven to 200oC/180oC/ Gas 6
  2. Mix all the dry ingredients in a large bowl
  3. Beat the wet ingredients together in a jug
  4. Fold the wet ingredients into the dry, taking care not to over mix
  5. Add the cheese mix ingredients
  6. Carefully combine together
  7. Divide between 10 muffin cases
  8. Bake for 20 minutes until risen and golden

Pizza Muffins

Pizza Muffins

Ingredients

  • Dry
  • 280g plain flour
  • 1 Tbsp. baking powder
  • 1 Tbsp dried oregano
  • 1/2 Tsp. salt
  • 50g grated parmesan cheese
  • Wet
  • 225ml buttermilk (or natural yoghurt)
  • 1 large egg, beaten
  • 2 Tbsp. red pesto
  • Cheeses
  • 1/2 ball of mozzarella (about 75 -100g)
  • 4 Tbsp. of ricotta cheese (optional)

Instructions

  1. Preheat the oven to 200oC/180oC fan/Gas 6
  2. Mix the dry ingredients into a bowl
  3. Beat together the wet ingredients in a jug
  4. Fold the wet ingredients into the dry ingredients and try not to over mix
  5. Add the cheeses and gently combine together
  6. Divide between 12 muffin cases
  7. Bake for 20-25 minutes until golden and well risen.

Notes

Serve garnished with fresh basil and as a brilliant accompaniment to soup. These freeze well to defrost overnight for lunch boxes or for reheating through when the fancy takes you 🙂
