Hug in a Mug

Ingredients

  • 4 sweet potatoes, peeled and diced
  • 2 Tbsp. coconut oil (solid at room temperature)
  • 1 onion, peeled and chopped
  • 4 cloves of garlic, peeled and crushed
  • Thumb sized piece of ginger, peeled and grated
  • 2 Tbsp. tomato puree
  • Half a jar of ready roasted peppers, drained and chopped
  • I bay leaf
  • 300g red lentils
  • 1.5 litres of vegetable bouillon/stock

Instructions

  1. Heat the coconut oil in a large pan
  2. Add the onion and fry for a few minutes until softened
  3. Add the ginger and garlic and cook for another minute
  4. Add the tomato puree and stir for another minute
  5. Add the chopped peppers and sweet potatoes, stir to coat with the oil for a minute
  6. Add the bay leaf, lentils and bouillon
  7. Bring to the boil then reduce the heat to a simmer for 25-30 minutes or until the sweet potatoes and lentils are tender
  8. Season to taste and serve garnished with fresh coriander

Notes

This smells amazing and tastes so comforting. You could also puree this and serve as a dhal.
