Gluten-free Chilli Corn Muffins

Ingredients

  • Dry
  • 140g fine corn meal
  • 1/2 tsp. baking powder (check this is gluten-free, not all are)
  • 1/2 tsp. bicarbonate of soda
  • 1 Tsp. dried chilli flakes (vary according to taste)
  • 1 Tsp. dried marjoram
  • 1 Tsp. cumin seeds
  • 1/2 Tsp. salt
  • 70g grated cheddar cheese
  • Wet
  • 2 Tbsp. melted unsalted butter
  • I large egg, beaten
  • 225ml natural yoghurt
  • Cheese mix
  • 1/2 ball of mozzarella cheese, diced
  • 1 Tbsp. fresh coriander, chopped

Instructions

  1. Preheat the oven to 200oC/180oC/ Gas 6
  2. Mix all the dry ingredients in a large bowl
  3. Beat the wet ingredients together in a jug
  4. Fold the wet ingredients into the dry, taking care not to over mix
  5. Add the cheese mix ingredients
  6. Carefully combine together
  7. Divide between 10 muffin cases
  8. Bake for 20 minutes until risen and golden
